Here is a wonderful twist to a black bean salsa recipe. Thanks to Wayne and Karen for thinking of the rest of use when they got this incredible recipe from Peggy… and a tremendous thank you to Peggy for sharing with all of us.

You can do what you like with the recipe, as I have no patent rights on it!! I will have to ask my sister-in-law where she came upon it, as that’s who I got it from. Just remember that after being on the web site it won’t be special anymore, cuz EVERYbody will be making it to eat!!!

Wonderful Black Bean Salsa Recipe Ingredients - 1 – 15 oz. can Black beans, drained and rinsed
- 1 – 11 oz. can White shoe peg corn
- ½ cup chopped green or red pepper
- ½ cup chopped red onion (psst……I used a Vidalia…)
- 1 medium tomato diced (psst……I used a large tomato…)
- ½ tsp. garlic powder
Dressing: - ½ cup Italian dressing
- ¾ tsp. hot pepper sauce
- ½ tsp. chili powder
- 2 tablespoon cilantro – chopped
Instructions - ...one more psst….I used McCormicks!!!! Although fresh does make it extra good IMO.
- So just mix all together, add the dressing and toss. I like best tostito’s chips with it.
