  • 1 tablespoon salt 1 ½ teaspoons freshly ground pepper
  • 2 tablespoons firmly packed brown sugar
  • ⅔ cup apple cider vinegar
  • ½ chipotle chile in adobo sauce plus ½ teaspoon of the adobo sauce*
  • 4 teaspoons honey
  1. * You will find the Chipotles both dried and canned in adobo sauce, a red sauce containing ground chiles, vinegar, herbs and spices.
  2. Cook the tomatoes in a non reactive sauce pan over medium high heat. Stirring occasionally, until they are soft and the liquid has cooked down, about 20 minutes. Remove from heat.
  3. In another saucepan over medium-high heat, combine the salt, pepper, cinnamon, cloves, allspice, brown sugar and vinegar. Stir until the sugar dissolves. Add to the tomatoes, along with the chipotle chili and adobo sauce. Bring to a boil over high heat; reduce the heat to medium and simmer, stirring occasionally, until thickened, about 10 minutes.
  4. Transfer to a blender or food processor fitted with a metal blade and puree until smooth. Add the honey to taste, stirring well.
  5. Serve with your favorite grilled meats.
